No-Bake Pumpkin Protein Balls

Adapted from Perfect Keto

[Whole30, paleo & keto-approved, gluten-free, dairy-free, vegan]

Recipe makes: 30 balls


  • 6 scoops PK vanilla collagen 
  • 9 tablespoons almond butter 
  • 1 1/2 cup coconut flour
  • 3/4 cup almond flour
  • 6 tablespoons brown sugar Swerve
  • 1 cup pure pumpkin 
  • 1 1/2 teaspoons cinnamon
  • 3 tablespoons almond milk


  • Add all ingredients to one bowl and mix
  • Roll into balls
  • Store in refrigerator or freezer

Pro Tips:

  • Store in freezer so they last longer and have my preferred consistency to combat the density of the coconut flour
  • Melt dark chocolate and dip them in it before freezing and top with shredded coconut if you feel so inclined
  • Keep in mind you should treat these like a snack (not dessert) since they're not super sweet
